[單品] [塞風]關於最後攪拌問題
小弟最近先前煮塞風步驟為1。但發現煮不出厚度換到2。後煮出來卻偏苦偏酸。個人猜想是因為最後攪拌動作除了搖出body也把雜味搖出來了。
請前輩指導。
曼特寧 水350 豆20g
1。水到上壺穩定後約75度
加粉 攪拌後 靜置到55秒移火輕柔攪拌 60sec包布。
香但沒有body
2。水到上壺穩定後約85度
加粉 攪拌後 靜置到37秒移火快速攪拌40sec包布。
