[閒聊] 窮人的雞肉丼飯

雞肉親子丼(又稱雞肉丼飯)是一道香濃滑順、製作簡單的日式家常料理。其精髓在於雞腿

今天本來想吃很久沒吃的日式料理店的
雞肉丼飯,本來還沒那麼貴,挺平民的
但最近幾年
已經讓我覺得貴
後來想想,買塊雞排,把冰箱剩下的一半洋蔥
跟蛋拿來利用,
感覺也是八九不離十了(笑)
回家後照著想法做,
查了一下雞肉洞的影片,好像必須要有日式醬油(柴魚醬油)、味淋
也沒有
最後拿魚露、糖跟米酒代替。
雞排已經炸好了,
我先煎洋蔥,比較軟了,再把雞排肉放下去
我也不知道這順序對不對,
或許應該先打蛋...
所以其實這裡就面臨到雞肉丼飯的
醬油、與蛋,那些店裡是怎麼做的問題。
ps.
以前在大學的時候有家比較專門做丼飯的店
他們是有一個專用的大鐵杓子在燒蛋、洋蔥,
還有生肉,最後再把這一匙烹調好的混合物
放到白飯上面。
我知道醬油如果加糖,在鍋子裡通常會焦黑
所以傾向於最後跟蛋一起放下,也不敢
讓蛋液太熟。
一陣手忙腳亂後,
完成的感覺吃起來幾乎....

好像不是吃外面的親子丼飯(我也忘記味道了)
而只是吃炸雞排跟一堆味道不太明顯的洋蔥跟滑蛋。
心得是雞排炸好的話,大概就沒辦法真的
變成丼飯的味道
