[問題] 戚風蛋糕烤出來會縮腰....QQ
大家好~~~想請教一下~~~
我今天試做了金棗蛋糕 結果烤出來放涼後
有些許的縮腰耶.....
下面附上配方 作法&照片
想請教如何改善 謝謝!!!!<(_ _)>
配方 作法
1.糖 35g 1.將材料1~3打至乾性發泡 (蛋白霜)
2.蛋白 144g (要打很久 可以先開者讓他打)
3.金棗汁 13g
2.將材料4&5 扮勻後 加入6&7
4.糖 35g
5.蛋黃 80g 3.上述拌勻後 加入低粉&泡打粉
(可以了話先過篩過 比較不容易結粒 我是沒有
6.油 37g
7.牛奶 42g 4.都扮勻後 先挖一半的蛋白霜進來拌勻後
整個到回打蛋白霜的筒子裡 快速攪拌均勻
8.低粉 72g
9.泡打粉 1g
烤溫了話.....我家是用烘王的烤箱 我放在上層
用150/100 沒有先預熱 烤了50分鐘吧!!
先烤30分鐘 用牙籤試 沒熟 再加十分鐘 沒熟 再加
烤完後我沒有倒扣 直接把蛋糕脫模放涼
然後就......縮了>""<
還有一個問題是....表面一定會裂嗎??
有沒有辦法可以讓他不裂呢?!! 3Q~
