[問題] 我在海外開了一家滷肉飯店
我在海外搞了一家滷肉飯店,雖然我是廚師但是我沒學過怎麼煮,研究很久煮出來味道對
但是在運營上就有很多問題,希望有相關經驗的或者在台業者解答一下
例如剛滷好的滷肉在一天內味道都很好
但是油蔥酥的味道總是會跑掉,海外的台灣人也是總說怎麼沒油蔥味問我是不是沒加
但其實我已經加很多了
第二天再賣要加熱時就會有點苦味或者肉過咸
如果一定要當天賣完那賣剩的滷肉到底該怎麼辦?
而且就算我特地從台灣帶電子陶鍋去保溫也好像沒什麼幫助
我用的是當地叫的梅頭肉混五花肉 ,梅頭就是差不多胛心肉,但是滷久了會被客人說肉
很柴
是燉滷得不夠久嗎?還是什麼?
我很想把台灣味帶到當地但要做好真的太難了
