[問題] 海綿蛋糕一加奶油就消泡
做了海綿蛋糕很多次 全蛋打發的
製作過程就是很一般的
全蛋打發後拌入麵粉跟加入油
有照書上說稍微溫熱的打發 也有先把一些麵糊跟油攪拌以後再全部放入
很詭異的是說如果加沙拉油就幾乎沒問題 不太會消泡 整個烤出來也很成功
但是換成奶油的話怎麼弄怎麼失敗
有想過是奶油的溫度 但是也把融化的奶油放到常溫了(至少跟沙拉油的溫度差不多)
也有先把一些麵糊跟奶油攪拌 再拌入全部麵糊
但是只要是奶油 一放進去麵糊就開始瘋狂消泡
還聽的到消泡的聲音這樣= = 烤出來就是一張麵皮...= =
請問這是什麼問題呢 很想用奶油做
試了好多次好浪費材料啊啊QQ
