[問題] 新手問麵糰粘手問題
最近開始用麵包機揉麵+烤箱烤小餐包和吐司,目前只做無餡料的,大多是參考網路配方
,也有借Carol的書看
今天試做吳寶春的金牌吐司,可是麵團好粘啊!
整形一直粘在手上和擀麵棍,加了手粉擀一圈手粉不見又粘了,想請問我哪裡做錯,還是
粘手就是正常的?
今天的配方是:
高筋麵粉 300g 細砂糖 26g 鹽 5g 無鹽奶油 15g 水 135g 鮮奶 70g 酵母 3g
除奶油外都放到麵包機攪拌成團後下奶油,接著讓麵包機跑完行程到一發取出,此時麵糰
已非常粘手了,雖然成品還是OK的,但粘手做的外觀好醜啊~希望各位高手給點建議,謝
