[問題] 大腸麵線柴魚湯頭煮法(代PO)
大家好~最近小弟想創業賣大腸麵線,湯頭傾向柴魚風味,本身覺得阿宗麵線味道柴魚不錯,試作時發現柴魚湯頭不好調,如果全部都用外售的柴魚精,柴魚粉快速熬湯時,味道很化學,感覺不天然,所以想改大骨+菜頭+柴魚熬湯當基底,但又不知接受度如何?所以想問大家覺得用清爽的菜頭湯底煮大腸麵線會很怪嗎?還有,因為成本考量,大腸比小腸貴,所以配料打算一半大腸一半小腸,不知各位能否接受?謝謝回答
