[問題] 要如何做出漂亮的饅頭(內有失敗照)
先附上食譜:
中筋麵粉150g
地瓜75g
鮮乳30g(鮮奶饅頭則不加地瓜,鮮奶共加80g)
酵母1.2g
糖10g
鹽1g
做法:食材全部放入麵包機打15分鐘成團,取出靜置3-5分鐘後桿開,薄薄塗上一層水後
捲起、分割,墊上饅頭紙後發酵至二倍大,蒸12-15分鐘,熄火後先等5分鐘後再掀蓋。

至今饅頭做了近十次了,每次都皺皮(淚),也上網找了原因:
1. 饅頭不能滴到水,會皺皮
買了粿巾綁鍋蓋、鍋蓋邊緣夾筷子,依舊醜醜
2. 饅頭水分不能太多,會皺皮
控制水份在52%-55%之間,還是皺皮
3. 做饅頭動作要快,發酵了才整形好會有氣泡易皺皮
本來麵糰打好我會鬆弛10-15分的,現在打好3-5分就趕緊桿開整型,不過還是失敗。
4. 昨天看到有人說用電鍋蒸比用不鏽鋼蒸籠容易成功,今天試了,結果仍然皺皮(大哭
)
實在想不到其他方法了,請萬能版眾幫忙指點怎麼樣才能蒸出漂亮的饅頭,謝謝(跪)
