[問題] 蛋餅

最近有在全聯買了義美的九層塔蛋餅皮
自己的作法:
1.平底鍋放IH爐熱鍋,倒點油,等油熱了
將蛋餅皮放進去,煎到略為膨脹後再翻面
稍為再煎個1-2分鐘,蛋餅皮就起鍋
2.把蛋打入碗裡打散,鍋子再加一點點油,再將打散的蛋倒入鍋子
接著把蛋餅皮蓋上去,等到蛋熟了以後,再翻面煎煮一下就起鍋
吃起來覺得比較脆,如果希望餅皮吃起來比較鬆軟,是不是有其他沒有留意到的因素?
