[問題] 炒飯讓食材在鍋中跳躍足夠熱嗎?
一直有疑問
炒飯通常都要顛鍋
搭配鍋鏟
讓米飯、食材在鍋中跳躍
跳躍之間,加入佐料
可是
這樣食材就一直在空中
沒有直接碰到鍋子
那
足夠熱嗎?
這跟炒飯要的鑊氣不是背道而馳?
因為看到其他教用家裡瓦斯煮菜
會特別說不要一直翻動食材
比較好升溫
為什麼跟炒飯的做法好像有矛盾啊!
