[問題] 脫模問題
請問一下唷~
大家在做蛋糕的時候~~烤好出爐倒扣~蛋糕會不會整個脫模掉下來阿?
每次不管是做淒風還是海棉蛋糕~出爐到扣的時候蛋糕一定會掉下來
也不是說一倒扣馬上掉下來,是大概過了1.2分鐘就會自己掉下來
就算出爐時是很澎的蛋糕,一掉下來也就扁了.....
我都沒有膨膨的成品照~~只有扁扁的成品照.....囧
要做幕斯蛋糕時就很困擾,因為都只能切兩片,不能切成三片,
有用過倒扣架倒扣,那次的結果更慘,因為蛋糕整個穿過倒扣架的四隻腳掉下來,
四分五裂的慘狀真的很令人難過,會是蛋糕沒有做好的關係嘛?
有時候看到大家說脫模很難,或是脫模脫的很醜時,
心理只有一句os.....我都沒有模可以脫....蛋糕自己就會掉下來.....
真的很令人難過阿~~~有板友跟我有一樣的困擾嘛?
補上做法:
1.蛋黃+糖攪拌均勻,再倒入牛奶和沙拉油
2.加入一大匙檸檬汁和少許的鹽.香草粉,把篩好的粉類加入拌勻
3.蛋白加糖打至接近硬性泡發
4.挖一大匙打好的蛋白和蛋黃糊攪扮均勻,再倒回蛋白中攪拌均勻(用切拌的方式)
5.倒入8吋白鐵活動模,進烤箱160度烤40分鐘
6.出爐後倒扣放涼
