[問題] 失敗的馬卡龍
這個週末試著挑戰高難度的馬卡龍,結果是讓我笑翻過去
因為進烤箱後一開始麵糊是乖乖的澎起來,我想說應該是成功了吧
沒想到再來再去看時,每一個已經塌下去,變成一種厚度比10元硬幣更扁的不知名物體
想請問一下大家....
1.扁掉的原因?會跟蛋白沒打發有關嗎?蛋白一定要到可以完全直立狀才ok?
2.參考了板上網友及周老師的作法,發現一開始進烤箱的條件就差很多.
版友們是預熱約200度,進烤箱後後關掉悶周老師是50度.請問這兩者哪種較好?
3.如何將氣泡完全去除?放在室溫1個小時後才進烤箱嗎?還是可以跟蛋糕一樣敲敲打打?
