[問題] 手揉麵團
因為手揉麵團一直很不順 所以google了一下

照著操作仍然是很不順
想請教版友是否我那裏方法不對呢
我的麵團製作流程如下:
鮮奶粉類材料比例約為0.6:1
1. 先將除了奶油、鮮奶之外的材料都放置在攪拌缸內
2. 加入一部份鮮奶攪拌
3. 搓揉成團
4. 從攪拌缸取出 (這時鮮奶大約還有一半的量
5. 照著影片中將麵團甩打,變得光滑些就再加些鮮奶
(這邊如果加太多,整個麵團會變的很黏,甚至黏住桌子(大理石桌),
影片中操作的量就足以讓我的麵團黏住桌子跟手
麵團黏的程度導致甩打的過程變得十分困難)
6. 如此反覆操作直到鮮奶用完
7. 加入奶油繼續甩打至可以拉出薄膜
上面整個過程用掉我一個多小時近二小時的時間 Orz
然後發酵麵團再用兩個小時,整個做得很無力
如果說做出來的東西還不錯那倒也覺得值得
但是烤出來的麵包又硬又乾 (上下火170度,無預熱烤箱,烤15分鐘)
想請教版友我的操作步驟是否有問題呢??
另外想請教版友,我看很多影片及部落格的介紹
他們的麵團都呈現白色,而且的卻是乳黃色
為什麼呢?
補充一下,cuisinart hm-70tw這類的攪拌機是否有可能將麵團打好呢?
