[問題] 焦糖製作
雖然翻過很多書和做法,但總是在最後的步驟翻車
焦糖上色完後,要馬上加入熱水攪拌均勻
我每次倒入熱水(通常是剛剛燒了一壺要喝的水,擺涼不到10min)
一倒下去,焦糖是焦糖,水是水
一攪拌,焦糖就變橡皮糖了........
請問這邊到底是甚麼問題
