[問題] 丙級麵包考試的一個小疑問
請問考試時基礎發酵完成後,要進行分割滾圓時,
這些分割好的麵糰要如何保濕呢?
上課時老師提供大塑膠袋來蓋麵糰,
要我們考試時帶帶塑膠袋進去!??
我對這個舉動是覺得蠻神奇的,
因為考試這樣做是違規的行為,
所以想請教有經驗的版友們是是如何幫分割滾圓的麵糰保濕呢?
