[問題] 蛋餅皮製作建議
請問我看到許多製作蛋餅皮的文章
有些人用中筋麵粉600g製作25片蛋餅皮
有些人用中筋麵粉300g製作8片蛋餅皮
我之前自己爬文打算用高筋麵粉100g製作一片蛋餅皮
像我這個100g高筋麵粉的量會不會太多
還是有什麼建議的呢??
我是打算合夥開早餐店蛋餅皮自己做
像這種大量製作的量一片蛋餅皮要如何搭配,有什麼建議呢
另外消費者真的會在意食材品質嗎?

另外小弟自己打算買小麥磨成麵粉
像這種磨成的麵粉屬於全麥的麵粉嗎
若100g全麥麵粉+20g太白粉做出來的蛋餅會不會感覺怪怪的呢
還是全麥麵粉就是高筋麵粉
對了一次做許多片蛋餅皮冷藏可以放多久時間
冷凍會不會口感比較不好
