[問題] 冷凍水餃變煎餃
剛看了美食鳳味裡面
阿基師的做法中
把冷凍水餃直接擺在平底鍋上
請問平底鍋需要倒油嗎?
看影片好像沒有...
另一個問題
一般如果不要用太多油
是用衛生紙沾一點油 塗抹均勻在整個鍋底嗎?
還是有使用其他的物品?
過程中還有調麵粉水
請問影片中的杯子大概多大阿?
中筋麵粉一般又是上哪買呢?

鍋底倒些許油 用衛生紙均勻塗抹整個鍋底嗎?

今天中午試做了一次...
結果全部沾黏在鍋底... 倒扣當然就完全無法掉下來
我是使用中筋麵粉100mL+水1000mL+橄欖油100mL(家裡剛好沒沙拉油,用橄欖油取代)
也是冷鍋狀態下放上冷凍水餃,開小火約30秒直到鍋子水氣飄出
再淋上麵粉水約淹沒水餃一半的高度
蓋上蓋子小火悶煮
不知道問題是出在哪邊?
