[問題] 這樣的水煮雞胸是怎麼做出來的
大家好 偶然在外面餐廳吃到一款驚為天人的水煮雞胸沙拉
從沒吃過這麼好吃的雞胸肉 無法想像這是雞胸肉的口感
由於不好意思向餐廳問作法 所以想來問問看有沒有人猜得出是怎麼做的
不是所謂的滑嫩 也不是像雞腿肉那樣的彈性
而是一種 鬆 不像一般肉類吃起來是緊實的感覺
有點像魷魚片跟魷魚絲的差別 纖維很鬆
但又沒有肉眼可見的纖維分離 依然是片狀的
咬下去像海綿一樣 纖維和纖維之間充滿湯汁被擠出來
十分的順口 不乾澀 連雞腿肉都無法比擬的多汁
想請問有沒有人知道這是怎麼做出來的呢?
