[問題] 鐵鍋炒高麗菜濕濕爛爛的
菜販老闆教: 爆香小火炒,然後加水悶一下,最後放鹽巴。
外面店家都是油多,大火快炒,那火候是家裡瓦斯爐無法比的。
其實洗高麗菜完丟下去時多少有水分,試過不加水的確很難炒的起來,但加水悶後就是整
盤
想問一下難道家裡瓦斯爐就炒不出乾爽的高麗菜嗎?
