[問題] 如何爆香不燒焦
各位高手大家好
小妹是煮菜新手,
想問大家簡單的炒菜問題,
每次小妹炒菜的順序都是,
熱鍋→倒油(大概五十元硬幣大小)→放蒜頭→稍微拌炒後加鹽→加菜→稍微拌炒後加水
可是常常在炒蒜時,把蒜炒到燒焦,
如果為了不讓蒜燒焦搶快下菜下水,
感覺又沒有爆香的香味,
請問是因為火開太大嗎?
還是因為油不夠多?
因為不想吃太油,所以希望炒起來的菜不要有太多油光><
可是希望有蒜香且蒜不燒焦,
請問該如何達到這個目標呢?
