[問題] 請問低溫發酵法?
聽說用低溫發酵法的麵包會比較好吃
但是我查了查好像有兩種做法??
一種是麵團打好直接塑膠袋封緊緊放冰箱
一種有點像中種法只打一部分,等要做的時候再把另一部分一起放下去打
我最大的疑問是:
第一種麵團可以用跟直接法一模一樣的比例嗎?
第二種麵團要怎麼分割原始麵團的比例勒???
因為沒有攪拌機,只好拼命找不用攪拌機也有好吃麵包的方法^^"""
另外
不知道版眾有沒有推薦的書可看看??
