[問題] 為什麼戚風蛋糕會內縮???
這實在是一個我很想搞懂的問題......
到底是什麼造成戚風蛋糕的內縮呢??
因為我用capik大網誌的配方就成功 http://www.wretch.cc/blog/dss0724/9254584
但是用思微的就失敗http://www.wretch.cc/blog/michelle212/21461241
同一個人烤的怎麼會差這麼多〒▽〒?
兩個人的配方大至差異在:
C大的粉比較多,液體比較少,有加泡打粉
為什麼這三樣會造成我烤的會內縮勒??
而且思微的蛋黃糊真的好稀喔.....可是她還是烤的如此水鐺鐺
粉量調高比較容易成功
但是我又想吃濕潤綿密的口感/___\
另外烤溫要怎麼調比較好??
因為如果從頭到尾用一樣的話我的戚風一定會大爆頂
用C大的方式是一點問題都沒有拉
但是如果要自己調溫度
是要先高後低還是先低後高??因為我兩個都看過
看到大炸裂的戚風我都不想管有沒有上色了QoQ
