[問題] 請問一下檸檬塔的內餡??
請問一下檸檬塔的內餡在煮的時候,
出現像是蛋白的東西,該怎麼處理呢?
我的製作手法是 :
檸檬皮跟糖混合加入檸檬汁跟全蛋下去攪拌均勻
再隔水加熱,食譜上是說要到80 85度左右,
但我的溫度計都不會跑溫度改以依照冒泡情況判斷,
但是這兩次煮內餡都出現類似蛋白的情況,請問該如何改善?
P.S. 請問黃萊姆大約多少錢阿??目前都用之前買錯的綠檸檬製作
