[問題] 正夫柳刃vs切付(劍型)柳刃
請問板上有沒有大大使用過這兩種柳刃
使用的手感上有什麼差異?
如果是拿來片魚(捏握壽司),切付or劍型柳刃可以像傳統(正夫)柳刃一樣好用嗎?
要切薄的話用切付柳刃會不會有點吃力?
