[問題] 台灣的神奇蕎麥麵?

有一位vegan的紐西蘭朋友之前在台灣住過他有經營一個vegan blog 讓在台灣/想來台灣的歪國人有機會能了解台灣的素食資訊最近有個巴西人寫信問他有關一個什麼麵的事情於是他就來信問我了... 但是我根本也不知道他在說的到底是什麼於是來請教各位大大原文與翻譯如下： I've been a vegetarian for over 15 years (lacto-ovo vegetarian) and lately I've been in touch with plenty of immigrants from Taiwan who run food stalls and restaurants specialized in taiwanese vegetarian recipes. Well, the thing is, mostly they cook yakisoba, and for my taste, their version is way better than the japanese ones (my country has the biggest japanese population outside Japan). I'm quite familiar with the japanese version of yakisoba and all the spices/ingredients used, but what caught my attention are the spices used on the taiwanese version. What do they use? I can name at least 3 different vendors, located on 3 very distant towns and they all have this very same taste. 我在巴西已經吃素超過15年（奶蛋素）最近接觸到很多台灣移民，他們在這擺食物攤或是經營餐廳，有特製台灣素食菜單主要是好奇他們的炒麵（還是油麵？）依我的口味，比日式炒麵要好吃多了我們國家的日本人口是日本本國以外最多的，所以我對日式炒麵及所有使用的香料/原料都很熟悉。台灣版本炒麵使用的香料卻引起我的注意。他們到底用了什麼？？我發現三個在不同地方（並且遙遠）的食物攤都有非常相似的口味 I can't describe what it is, but I'm desperate to know what is used on it. I wasn't planning on writting THIS much, but, you see, I'm really curious and willing to try my own version of their yakisoba. Is there anything you would suggest?
