[問題] 食譜書推薦?
最近常待在家做西點跟麵包
也終於換了水波爐!(烤麵包很好用)
想多買幾本基礎偏理論跟原理的書回家研究
(有買過幾本食譜書可是幾乎都只有配方…沒有什麼理論)
做麵包用麵包機揉麵幾乎都成功
但戚風蛋糕就常失敗也不懂哪裡出問題…
還有想知道哪些可以減糖
家裡人不喜歡吃太甜的 但不敢亂減太多糖…
想找一些介紹比較詳細的書來看!
例如溫度對麵包發酵的影響還有不同的發酵法之類的~
查了一些版上推薦的書
麵包類:
1.麵包教科書1
2.麵包教科書2
3.野上師傅的書
糕點類:
1.用科學方法了解糕點的為什麼(這本應該會買)
2.法國糕點大全
3.糕點聖經
後兩本比較貴應該只會買一本
