這件事我之前有發文提過了
現在有一個很奇怪的現象
就是對甜點的評語為「不會很甜」
是一種稱讚
甚至是唯一的稱讚
想到上次做了一個我很有自信的香蕉蛋糕
只不停得到「不會很甜」
那濕潤的口感呢?
那焦甜帶核果香的多層次味覺呢?
那軟綿但豐厚的組織呢?
沒有人有給這樣的回饋
心 都 碎 了
如果沒有認真品嚐還跟我要配方
我大概馬上炸掉
喔 我有炸過了
那一次我給了一個我沒有調整過的原始配方
外加了一樣原料成本比較高的酸奶
但我想這配方被拿回去後應該也會東減西減一番吧
隨便啦
如果不是真的懂原料特性
不要亂改配方好嗎?
烘焙是科學
可不是家家酒
