[問題] 滷東西到底該不該放水?

以焢肉為例好了,我是加水派的
理由是加水之後,能讓滷汁均勻的讓肉吸收
這樣就不會有一邊比較入味,但一邊不入味的問題
但像我媽是屬於不加水派
理由是用醬油小火去煮,慢慢讓肉釋放出他原本的油脂
這樣醬油燒出來的東西才會香
而且加水之後東西很容易腐敗
聽起來確實有道理,但我媽煮出來的品質就很不穩定
有時入味有時不入味
最近在學滷豆乾查食譜也是發現,有人加水,有人則是只要油跟醬油就OK
我沒學過正統的料理方式,所以想請問大家怎麼做才是正確的?
