[問題] 炒菜調味問題
一直以來炒菜調味都是用市售的香菇粉、柴魚粉或雞粉
最近開始想要學習不依賴這些調味料
我看了一下阿基師的教學似乎都只用鹽巴調味
可是如果我只用鹽巴調味的話 感覺吃起來只有鹹味 蔬菜的清甜帶不出來
今天試著用昆布高湯來炒油菜再加少許鹽巴
感覺味道仍是不如我使用鮮味炒手(康寶的調味料)
應該也可以使用大骨高湯(這個應該不錯只是成本較高也較麻煩)
爬文好像香辛料也有幫助 不過除了薑蒜外還有什麼適合炒菜呢
想知道大家炒菜調味都是用什麼呢?
